Asian-Style Princess Chicken

Instructions

  1. Combine soy sauce, sherry, five-spice powder, and cornstarch in a bowl; add chicken, coat, and marinate in the refrigerator for 30 minutes.

  2. Heat 2 tablespoons oil in a wok or skillet. Add one ginger slice, brown for 2-3 minutes, then remove and discard.

  3. Cook the marinated chicken in the wok for 5-6 minutes until done; transfer to a plate and wipe the wok clean.

  4. Heat the remaining 1 tablespoon oil in the wok. Add the other ginger slice, brown, and remove.

  5. Stir-fry the onion for 1 minute, then add paprika and cook for an additional minute until softened.

  6. Push the onion to the side, add mushrooms to the center with a splash of liquid (rice wine, water, or broth) to prevent drying, and stir in cashews.

  7. After one minute, add red bell peppers and stir-fry for another minute (total 2-3 minutes for vegetables).

  8. Return the cooked chicken to the wok; stir in dark soy sauce and sugar.

  9. Cook for one minute to heat thoroughly, then remove from heat and stir in sesame oil.
