Arroz Cubano: Easy Cuban Rice

Instructions

  1. Prepare the sofrito.

  2. For the rice, heat 2-3 tablespoons of olive oil in a medium saucepan over medium-high heat. Add the rice and coat it with oil, then add enough water to cover the rice and bring to a boil. Season with salt, then reduce heat, cover loosely, and simmer for 20 minutes until cooked.

  3. In a small frying pan, heat 1/4 inch of olive oil over medium heat. Fry the eggs individually, sprinkling each with salt.

  4. To serve, place a scoop of rice on each plate, make a central depression, fill with sofrito, and top with a fried egg. Serve immediately, accompanied by a baguette.
