Instructions

  1. Heat oil or lard in a large pot over medium-high heat. Sauté onions and chilies for 2-3 minutes until fragrant.

  2. Stir in rice and cook for 1 minute until translucent.

  3. Add chicken and garlic, cooking for 2 minutes with occasional stirring.

  4. Pour in broth, tomato puree, and salt; bring to a boil, then reduce heat to a bare simmer.

  5. Cover and simmer for 25 minutes, then remove from heat and let rest, covered, for 5-30 minutes.

  6. Serve garnished with chopped onion, cilantro, or diced chilies.
