Instructions

Heat oil or lard in a large pot over medium-high heat. Sauté onions and chilies for 2-3 minutes until fragrant.

Stir in rice and cook for 1 minute until translucent.

Add chicken and garlic, cooking for 2 minutes with occasional stirring.

Pour in broth, tomato puree, and salt; bring to a boil, then reduce heat to a bare simmer.

Cover and simmer for 25 minutes, then remove from heat and let rest, covered, for 5-30 minutes.
