Instructions

  1. Bring 3 cups of water to a simmer in a large pot.

  2. Add ginger pieces, cinnamon sticks, whole cloves, and salt; simmer for 15 minutes to infuse flavors.

  3. Remove the spices, reserving the infused water.

  4. Stir in coconut milk and 1 cup of water, then bring the mixture to a boil.

  5. Add rice, sugar, raisins, and coconut; stir well. Reduce heat to a simmer, cover, and cook for 20 minutes, stirring occasionally.

  6. Uncover and stir. Continue cooking for 20-30 minutes, or until rice is cooked, creamy, and water is absorbed. If needed, add 1/4 cup hot water at a time until done.

  7. Pour into a serving dish, allow to cool, and chill in the refrigerator. Garnish with cinnamon before serving.
