Instructions

  1. Heat oil in a medium saucepan over medium heat.

  2. Sauté sofrito for 1-2 minutes until fragrant.

  3. Stir in sazón (if applicable), olives, bay leaf, salt, and pepper.

  4. Once bubbling, add corn and rice; stir to coat.

  5. Pour in water (or stock), stirring; bring to a rolling boil over high heat.

  6. Boil undisturbed for 1-2 minutes, then stir again.

  7. Reduce heat to low, cover, and cook for 20 minutes.

  8. Remove lid, fluff rice, then re-cover and let sit off heat for 5 minutes.

  9. Discard bay leaf and serve.
