Heat oil in a medium saucepan over medium heat.

Once bubbling, add corn and rice; stir to coat.

Pour in water (or stock), stirring; bring to a rolling boil over high heat.

Boil undisturbed for 1-2 minutes, then stir again.

Reduce heat to low, cover, and cook for 20 minutes.

Remove lid, fluff rice, then re-cover and let sit off heat for 5 minutes.
