Instructions

  1. Melt butter and oil in a large skillet over medium-high heat.

  2. Rinse liver under cold water, drain, and pat dry.

  3. Combine salt, pepper, flour, and paprika in a plastic bag; add liver and shake until coated.

  4. Add floured liver to the hot skillet, arranging evenly to brown on all sides without vigorous stirring.

  5. Toss red onion slices with sumac, chopped parsley, and salt.

  6. Serve the cooked liver on a bed of the seasoned onion mixture or with the mixture on the side.
