Armenian Style Kufta With Potatoes and Tomatoes Recipe

An Armenian-inspired kufta features ground lamb or beef with potatoes in a savory meatloaf-style casserole.

Instructions

  1. Start the broiler.

  2. Soak bread in milk, then mash into a paste.

  3. Process parsley; add to a large bowl with ground lamb.

  4. Finely chop onion and garlic; add to the bowl with the bread and lamb mixture.

  5. Add salt, cumin, sumac, cayenne pepper, allspice, pepper, and mace; mix until well-combined.

  6. Press the mixture into a casserole dish and broil until browned, about 15 minutes.

  7. Preheat oven to 375 F.

  8. Slice potatoes and tomatoes 1/4-inch thick; layer over the meat, potatoes first, then tomatoes.

  9. Cover the casserole and bake on the middle rack for 40 minutes.
