Argentinian-Style Chimichurri Sauce

Instructions

  1. Pulse 3 to 6 coarsely chopped garlic cloves and 2 tablespoons coarsely chopped red onion in a food processor until finely chopped.

  2. Add 2 cups coarsely chopped fresh flat-leaf parsley, 1/4 cup coarsely chopped fresh cilantro (optional), and 1/4 cup coarsely chopped fresh oregano (or 1 teaspoon dried) to the processor, then pulse briefly until finely chopped.

  3. Transfer the mixture to a serving bowl.

  4. Stir in 1 tablespoon fresh lime juice, 2 tablespoons red wine vinegar, and 1/2 to 3/4 cup olive oil.

  5. Season with kosher salt and red pepper flakes to taste, then cover and refrigerate until serving.
