Aprikosenkuchen: German Apricot Cake

Instructions

  1. Preheat oven to 350 F and coat a baking pan with cooking spray.

  2. In a large bowl, cream butter with sugar and vanilla.

  3. Beat in eggs one at a time, then mix in lemon zest.

  4. In a separate bowl, whisk flour, baking powder, and salt.

  5. Gradually beat the dry ingredients into the wet mixture, then mix in buttermilk.

  6. Spread batter into the prepared pan and arrange apricot halves, cut side down, on top.

  7. Bake for 30-40 minutes, until golden brown.

  8. Serve with sweetened whipped cream, if desired.
