Instructions

  1. Prepare a water bath canner and 4 half-pint canning jars.

  2. Halve, pit, and chop the apricots.

  3. Combine all ingredients in a large saucepan.

  4. Bring to a boil, then reduce heat and cook until the sauce thickens to a syrup-like consistency (20-60 minutes).

  5. Optionally, purée the sauce with an immersion blender.

  6. Ladle the hot sauce into clean jars, leaving 1/4-inch headspace.

  7. Secure with lids and rings, then process in the water bath canner for 15 minutes.
