Apricot Jam and Coconut Meringue Hertzoggies Recipe
Small pastries feature a crisp puff pastry base, a tart apricot jam center, and a chewy coconut meringue topping.

Instructions

Preheat the oven to 400 F (200 C) and grease a 12-hole patty pan or mini muffin tray.

Cut 12 rounds from the ready-rolled pastry, then line the tray hollows with them.

Spoon 1/2 teaspoon of apricot jam into each pastry-lined hollow.

Combine the superfine sugar and baking powder.

Beat the egg whites until stiff, then fold in the sugar mixture and coconut.

Spoon one tablespoon of the meringue mixture onto each jam-filled pastry.

Bake for 10-15 minutes, or until golden brown.

Remove from the oven and allow to cool on a wire rack.
