Apricot Blatjang

Instructions

  1. Soak whole dried peaches and apricots in vinegar overnight to rehydrate.

  2. Chop the soaked fruit and onions into small pieces using a food processor.

  3. Combine all ingredients in a pot and heat gently for 20 minutes until sugar dissolves.

  4. Simmer uncovered over medium heat for 1 hour, stirring occasionally.

  5. Cool for 10-15 minutes before bottling into hot, sterilized jars.
