Applesauce Raisin Cake

Steep raisins in hot water for 15 minutes until plump, then drain.

Line a 9x13-inch pan with nonstick foil.

In a large bowl, whisk together flour, sugar, baking soda, cocoa, cinnamon, salt, nutmeg, and allspice.

Create a well, then add oil, applesauce, and eggs, mixing thoroughly.

Fold in the plumped raisins.

Pour batter into the prepared pan and bake for 30-35 minutes.

Cool cake to room temperature.

For the frosting, beat cream cheese until smooth.

Incorporate vanilla extract and confectioners' sugar.

Blend in lime juice, adding milk or cream if needed to achieve a smooth, spreadable consistency.

Spread frosting onto the cooled cake, then refrigerate for at least 1 hour to set.
