Apple Turkey Brine

Instructions

  1. In a large pot, bring 1 quart of water to a simmer with salt and sugar, stirring until dissolved.

  2. Remove from heat, then add cloves, cinnamon stick, peppercorns, and orange zest, allowing the mixture to cool for 30 to 40 minutes.

  3. Stir in cold apple juice and an additional 1 quart of cold water, then refrigerate until the brine is thoroughly chilled.

  4. Submerge the poultry in the chilled brine within a large plastic container or brining bag and refrigerate for 1 hour per pound of poultry.

  5. Before cooking, thoroughly rinse all brine from the poultry to prevent excessive saltiness.

  6. Season and cook the poultry as desired using your preferred method.
