Apple Streusel Bundt Cake

Preheat the oven to 350 F and generously grease and flour a 10-inch tube or Bundt pan.

Combine butter pieces, flour, brown sugar, and cinnamon for the streusel; mix until crumbly, then stir in chopped pecans and set aside.

In a separate bowl, whisk together the cake's flour, baking powder, and baking soda; set aside.

Cream butter and sugar until light and fluffy; then beat in eggs one at a time, followed by vanilla extract and vanilla yogurt.

Gradually incorporate the dry ingredients into the wet mixture using a mixer on low speed until just blended.

Spoon approximately 3 cups of batter into the prepared pan, then layer with 1/4 cup of streusel, all the apples, and an additional 1/2 cup of streusel.

Cover with the remaining batter, then top with the rest of the streusel, pressing it lightly into the batter.

Bake for 50 to 60 minutes, or until a toothpick inserted into the center emerges clean.

Cool the cake in the pan for 5 minutes, then invert onto a baking sheet, remove the pan, and allow it to cool completely.

Transfer to a serving plate and, if desired, ice with vanilla glaze before serving.
