Instructions

  1. Combine apple juice, orange juice, salt, brown sugar, cloves, and nutmeg in a large pot.

  2. Bring the mixture to a boil over medium heat, then simmer for 15 minutes until salt and sugar dissolve.

  3. Cool the brine to room temperature for 40-60 minutes, then add cold water.

  4. Submerge the turkey in the brine within a large container and refrigerate, covered, for at least 1 hour per pound.
