Apple Snacking Cake

This cinnamon-scented, apple-studded cake is quickly assembled and baked in under an hour for an easy fall dessert.

Instructions

  1. Preheat oven to 350F and position a rack in the center.

  2. Grease an 8-inch square cake pan and line with parchment paper extending over two sides.

  3. Whisk melted butter, granulated sugar, light brown sugar, and vanilla extract in a large bowl.

  4. Whisk in eggs one at a time, then whole milk.

  5. Add baking powder, cinnamon, and salt, whisking well after each addition.

  6. Fold in all-purpose flour until just combined.

  7. Scrape batter into the prepared pan and smooth the top.

  8. Scatter diced Granny Smith apple over batter; sprinkle with turbinado sugar if desired.

  9. Bake for 40-45 minutes, rotating halfway through, until a skewer inserted into the center comes out with moist crumbs.

  10. Cool on a rack for 10 minutes, then lift cake from pan using parchment overhang.

  11. Cool completely, remove parchment, and sift confectioners' sugar over cake if desired. Slice and serve.
