Instructions

  1. Mix one tablespoon sugar per cup of water, then pour over apple scraps in a ceramic or glass container, ensuring they are covered.

  2. Cover the container with a dishtowel and leave at room temperature for 1 to 2 weeks, stirring once daily.

  3. After 1 to 2 weeks, when the liquid darkens, strain out and discard the fruit solids.

  4. Continue to keep the liquid at room temperature for 2 weeks to 1 month, stirring daily, until it becomes vinegary and sour.

  5. Bottle the finished vinegar in a glass container, seal, and store away from heat or light.
