Apple Pork Tenderloin in Puff Pastry

Instructions

  1. Preheat the oven to 400 F.

  2. In a skillet, melt butter and brown pork tenderloins for 5-7 minutes. Remove pork and let cool.

  3. Add onion and garlic to skillet drippings; cook 4-5 minutes until tender. Stir in chopped apple, salt, and pepper until tender. Add thyme and apple juice or wine; cook until liquid evaporates. Cool mixture for 10 minutes.

  4. Roll out puff pastry to a 13-inch square and cut into two rectangles.

  5. Spread half of the cooled onion mixture down the center of each pastry rectangle, then top with a tenderloin. Brush pastry edges with egg, fold, and press to seal.

  6. Place sealed bundles seam-side down on a lined cookie sheet. Brush with remaining egg, cut slits, and decorate.

  7. Bake for 20-30 minutes until pastry is golden brown and pork reaches 145 F. Let stand 10-15 minutes before slicing and serving.
