Apple Pie Cheesecake

Instructions

Preheat the oven to 375 F.

Mix graham cracker crumbs, melted butter, and sugar; press into a 9-inch springform pan and refrigerate.

Slice a vanilla bean lengthwise and scrape out the pulp.

Beat cream cheese, eggs, sour cream, granulated sugar, vanilla bean pulp, and salt until blended.

Pour filling over the chilled crust.

Bake for about 1 hour, until edges are set and the center slightly jiggles.

Cool cheesecake completely on a wire rack.

Once cooled, preheat oven to 450 F.

Spoon apple pie filling over the cheesecake.

Cut thawed pie crust into 1-inch strips.

Arrange strips in a lattice pattern on top.

Trim excess crust, brush with beaten egg, and bake for 20-25 minutes until lightly browned.

Cool completely on a wire rack, then cover and refrigerate for several hours or overnight.
