Apple Peach Pie

Instructions

  1. Preheat oven to 400 F and line a 9-inch pie pan with one refrigerated pie crust.

  2. In a large bowl, combine sugar, tapioca, cinnamon, apple, and peach slices.

  3. Sprinkle cornflakes into the pie crust, then fill with the fruit mixture.

  4. Top the fruit with dry lemon gelatin and dot with butter pieces.

  5. Place the second crust on top, flute the edges, cut decorative slits, and sprinkle with sanding sugar.

  6. Bake for 10 minutes at 400 F, then reduce oven temperature to 350 F and bake for 45-50 more minutes until golden and bubbling.

  7. Cool on a wire rack for at least 1 hour before serving.
