Instructions

  1. Wash, core, and slice the apples.

  2. Place the sliced apples in a large pot and cover with water, ensuring the water level is just above the apples.

  3. Bring the pot to a boil over high heat, then reduce heat to medium-low and gently boil for 40 minutes.

  4. Strain the cooked apples through a fine-mesh strainer, pressing thoroughly to extract all juice, and return the liquid to the pot.

  5. Taste the juice; optionally add sugar and cinnamon sticks, then simmer until the sugar dissolves and the desired flavor concentration is achieved.

  6. Use the remaining apple pulp to make applesauce, if desired, seasoning with sugar and cinnamon.
