Instructions
-
Preheat the oven to 350 F.
-
Peel, core, and chop the apples. In a large saucepan, melt 2 tablespoons butter with brown sugar over medium heat, then add chopped apples and cook for 10 minutes until softened; set aside.
-
Generously butter a 6-inch pudding basin. Remove crusts from one bread slice, cut to fit the basin base, and brush both sides with clarified butter before pressing into place.
-
Remove crusts from remaining bread, reserving one slice for the lid. Cut the rest into 3x1.5 inch rectangles, brush thoroughly with clarified butter, and line the basin sides with them, overlapping slightly and reaching the rim.
-
Fill the prepared basin with the cooked apples.
-
Cut the reserved bread slice (or leftover pieces) into a circle or triangles for the top, butter well, and place over the apples.
-
Cover a thick cardboard circle (cut to fit the basin rim) with foil, place it on top of the Charlotte, and weigh it down with a ramekin filled with pie weights.
-
Place the basin on a baking sheet and bake for 30 minutes until the bread sides are golden.
-
Remove the cardboard lid and bake for 8 more minutes to brown the top.
-
Remove from the oven, discard the cardboard lid, invert onto a plate, and serve immediately with custard or whipped cream.
