Apple and Brie Soup

Instructions

  1. Melt butter in a large pot over medium heat.

  2. Add onions, apples, and celery; sauté for 8 to 10 minutes until soft.

  3. Stir in flour, cook for 2 minutes, then gradually whisk in chicken stock or water.

  4. Add white pepper, cumin, and ginger; bring to a boil, then reduce heat and simmer for 15 minutes.

  5. Remove from heat, puree the mixture, then return it to the pot over medium heat.

  6. Stir in cheese cubes until melted, then season with salt to taste.

  7. Before serving, whisk in heavy cream and garnish with chives and nutmeg.
