Appalachian Blackberry Wine Recipe

Instructions

  1. In a saucepan, combine 2 quarts of water with a beaten egg white and sugar; bring to a boil for 5 minutes, skim any foam, and set aside to cool completely.

  2. In a large non-reactive container, combine 3.5 quarts of water with the blackberries.

  3. Cover the blackberry mixture and let it stand for 24 hours.

  4. Add the cooled syrup to the blackberry mixture and stir well.

  5. Pour the mixture into a jar, cover the opening with a cloth, then secure the lid.

  6. Skim the wine surface each morning for 10 days.

  7. Cover the wine with a cloth and let it stand until fermentation ceases; then strain out solids, cover, and refrigerate to slow further fermentation.
