Anticuchos de Carne: Grilled Beef Kabobs

Instructions

  1. Cut beef into 1 1/2-inch pieces.

  2. Mash garlic into a paste, adding water if needed.

  3. Combine garlic paste, 1/4 cup vinegar, 1/4 cup chile pepper paste, 1 tablespoon cumin, 1 tablespoon salt, and 2 teaspoons pepper to create the marinade.

  4. Pour marinade over beef and mix thoroughly.

  5. Marinate beef overnight in the refrigerator, or for at least 1 hour at room temperature.

  6. Prepare your grill.

  7. Thread beef pieces onto skewers, approximately 4 pieces per skewer.

  8. Mix 1/2 cup vegetable oil, 1/4 cup vinegar, and a pinch of cumin for basting.

  9. Grill skewers for about 5 minutes per side, basting frequently, until desired doneness.

  10. Serve with rice and corn.
