Anmitsu: A Classic Japanese Dessert

Instructions

  1. Soak kanten in 1 2/3 cups water for one hour; reserve the water, then squeeze the kanten dry and tear into pieces.

  2. Boil the kanten pieces with the reserved water in a pan, then reduce heat and simmer, stirring until dissolved.

  3. Stir in sugar, then pour the mixture into a flat container and cool until firm.

  4. For the syrup, combine 1/4 cup water and 2/3 cup sugar in a saucepan, heating until the sugar dissolves.

  5. Optionally add lemon juice to the syrup, then set it aside to cool.

  6. Cut the firm kanten jelly into small cubes.

  7. Assemble by spooning kanten and fruits into individual bowls, then top with the cooled syrup and sweet bean paste.
