Anglesey Egg Recipe

Anglesey Eggs are a Welsh vegetarian dish featuring mashed potatoes, eggs, and a creamy leek sauce, ideal alone or paired with meats.

Instructions

  1. Preheat oven to 200 C (400 F).

  2. In a large frying pan, melt 25g butter. Add sliced leeks, season with salt and pepper, and cook on medium heat for 5 minutes until softened.

  3. Increase heat, stir in flour, and cook for 2 minutes while continuously stirring.

  4. Gradually pour in milk, stirring continuously, and cook for 2 minutes until a thick, creamy sauce forms.

  5. Reduce heat, simmer for 5 minutes, then stir in half the cheese and adjust seasoning as needed.

  6. Butter an ovenproof dish. Spread mashed potatoes to cover the base, arrange egg quarters into the potatoes, then pour the leek sauce over.

  7. Mix the remaining cheese with breadcrumbs and sprinkle evenly over the leek sauce.

  8. Bake for 20 minutes, or until the top is golden-brown and bubbling.
