Instructions

  1. Clean the anchovies by removing their heads, innards, and spine, then rinse thoroughly under cold water.

  2. Arrange the cleaned anchovies flat in a glass baking dish and freeze for 3 hours.

  3. After freezing, cover the anchovies completely with vinegar.

  4. Sprinkle finely chopped garlic over the fish, then pour olive oil into the dish.

  5. Seal the dish with plastic wrap and refrigerate for 2 to 3 hours to marinate.

  6. Before serving, season the anchovies with salt to taste and garnish with fresh parsley, offering alongside rustic bread and Spanish olives.
