Amish Sourdough Bread Recipe

A sweet starter is used to prepare an easy Amish sourdough, also known as friendship bread.

Instructions

  1. Preheat oven to 400°F with a rack in the center.

  2. Combine yeast and warm water in a large bowl.

  3. Mix in 2.5 cups flour, salt, sugar, and sourdough starter.

  4. In a separate bowl, combine 2.5 cups flour and baking soda; stir into the sourdough mixture. Gradually add remaining 1 cup flour until the dough is shaggy and no longer wet.

  5. Knead the dough on a lightly floured surface or using a stand mixer for 6-8 minutes until smooth and elastic; form into a ball.

  6. Grease a large bowl, coat the dough, cover, and let rise in a warm place for 1.5-2 hours until doubled.

  7. Punch down the dough, divide in half, cover, and rest for 10 minutes.

  8. Grease two 9x5-inch loaf pans or a large baking sheet.

  9. Shape dough, make shallow X-slashes, cover, and let rise for 1 hour until doubled.

  10. Bake loaves for 35-40 minutes until golden, then cool completely on wire racks.
