Instructions

  1. Macerate all herbs and spices in grain alcohol for 5 days in a tightly sealed, dark-wrapped glass jar.

  2. Concurrently, combine vermouth and sugar in a separate sealed glass jar, storing it in a cool, dark place for 5 days until the sugar dissolves.

  3. After 5 days, strain the alcohol into a clean bottle. Transfer the strained herbs to the vermouth-sugar mixture and steep for an additional 7 days.

  4. Strain the infused and sweetened vermouth into the bottle with the previously strained alcohol.

  5. Allow the combined mixture to sit for 1 day, then filter it through a paper coffee filter.

  6. Transfer the homemade amaro into a clean bottle, cork tightly, and age in a cool, dark place for at least 8 months.
