Instructions

  1. Clean cauliflower and soak florets in hot, salted water for 10 minutes.

  2. Parboil salted potatoes for 3-4 minutes in hot water (microwave or stovetop), then drain and set aside.

  3. Heat oil in a deep pan over medium heat, then toast cumin seeds until fragrant.

  4. Sauté onion until soft, then add ginger and garlic pastes and fry for 1 minute.

  5. Stir in all spices and fry for 1 minute, then add chopped tomatoes and green chiles (if desired), cooking until tomatoes soften (2-3 minutes).

  6. Add the prepared cauliflower, potatoes, and peas; season with salt. Cover and cook for 3-5 minutes, then remove from heat.

  7. Garnish with fresh coriander and serve hot with chapatis, parathas, naan, or rotis.
