Instructions

  1. Start boiling well-salted water in a pot, then wash, peel, and quarter the potatoes.

  2. Add potatoes to the boiling water, simmer for 8 to 10 minutes until tender, then drain thoroughly.

  3. Mash the drained potatoes with chili pepper and cumin in a large bowl, adjusting seasoning as needed.

  4. Fold in green onions and cilantro.

  5. Form the potato mixture into 2-inch balls using damp hands.

  6. For the batter, combine flour, baking powder, turmeric, and a pinch of salt in a separate bowl, then whisk in enough water to create a thin, crepe-like consistency.

  7. Heat about 1 inch of oil in a high-sided skillet until shimmering.

  8. Dip potato balls into the batter, shake off excess, and fry in batches for approximately 7 minutes until lightly browned on all sides.

  9. Serve the fried potato balls with chutney.
