Almond Pastry Cream

A rich almond pastry cream, also known as crème patisserie, is prepared with milk, egg yolks, and almond extract.

Instructions

  1. Warm milk in a small saucepan over low heat until steaming.

  2. Whisk egg yolks, sugar, flour, and cornstarch together until smooth.

  3. Gradually whisk half of the warm milk into the egg mixture.

  4. Return the tempered egg mixture to the saucepan with the remaining milk; continue stirring and cook for 1-2 minutes until the custard reaches 170 F and thickens.

  5. Remove from heat, then stir in almond extract.

  6. Chill the pastry cream completely before using.
