Instructions

Preheat oven to 360 F/180 C degrees.

Zest the lemon, avoiding the pith.

Separate egg yolks from whites; beat egg whites to a stiff peak.

Gently stir egg yolks into the beaten whites.

Mix in sugar, lemon zest, ground almonds, and optional cinnamon.

Shape dough into mounds or pyramids and place on a greased or parchment-lined cookie sheet.

Bake for about 15 minutes until golden.

Quickly loosen cookies with a spatula immediately after removing from oven, then cool on a rack.
