Instructions

  1. Preheat oven to 360 F/180 C degrees.

  2. Zest the lemon, avoiding the pith.

  3. Separate egg yolks from whites; beat egg whites to a stiff peak.

  4. Gently stir egg yolks into the beaten whites.

  5. Mix in sugar, lemon zest, ground almonds, and optional cinnamon.

  6. Shape dough into mounds or pyramids and place on a greased or parchment-lined cookie sheet.

  7. Bake for about 15 minutes until golden.

  8. Quickly loosen cookies with a spatula immediately after removing from oven, then cool on a rack.

  9. Serve or store in an airtight container.
