Instructions

  1. Preheat the oven to 325 F and lightly grease a baking sheet.

  2. Cream together butter, sugar, and salt in a large bowl until light and fluffy.

  3. In a separate bowl, whisk flour and cornstarch, then sift this mixture into the creamed butter; mix quickly until just combined.

  4. Lightly knead the dough on a floured surface to form a cohesive mass.

  5. Roll the dough between two sheets of parchment paper to 1/4-inch thickness, cut into desired shapes, prick with a fork, and place on the prepared baking sheet.

  6. Bake for 25 minutes, or until pale brown and crisp, then sprinkle warm shortbreads with superfine sugar and cool on a wire rack.
