'All-American' Meatloaf

Instructions

  1. Preheat the oven to 325 F.

  2. Finely mince carrots, celery, onion, bell pepper, mushrooms, and garlic in a food processor.

  3. Sauté the minced vegetables in melted butter and olive oil for 5 minutes, then cool.

  4. In a large bowl, combine ground chuck, cooled vegetables, and all remaining ingredients except breadcrumbs; mix gently.

  5. Add breadcrumbs and mix until just combined.

  6. Lightly grease a shallow roasting pan. Form the meatloaf mixture into a 6x3-4 inch loaf, smoothing the surface.

  7. Bake for 30 minutes. While baking, prepare the glaze by mixing brown sugar, ketchup, and Dijon mustard.

  8. Remove the meatloaf and spread the glaze evenly over the top.

  9. Return to the oven and bake for an additional 35-45 minutes, or until the internal temperature reaches 155 F.

  10. Remove from oven and let rest for 20 minutes before slicing.
