Alfajores Recipe (Caramel Sandwich Cookies)
Traditional South American alfajores are delightful cookies, perfect with tea or coffee.

Instructions

Preheat oven to 350 F.

Combine cornstarch, flour, baking powder, and salt in a bowl.

Blend butter into the flour mixture until smooth.

Add powdered sugar, pisco, and vanilla, combining to form a smooth dough; add more pisco if crumbly. Shape into a disk, wrap, and refrigerate for 30 minutes.

On a lightly floured surface, roll dough to 3/8" thickness and cut into 2-inch circles, re-rolling scraps until all dough is used.

Place cookies on a parchment-lined baking sheet.

Bake for 15-17 minutes until edges are golden, rotating halfway. Cool for 5 minutes, then transfer to a rack to cool completely.

Spread dulce de leche on one cookie.

Top with a second cookie to form a sandwich and roll the edges in coconut.
