Alfajores Recipe (Caramel Sandwich Cookies)

Instructions

  1. Preheat oven to 350 F.

  2. Combine cornstarch, flour, baking powder, and salt in a bowl.

  3. Blend butter into the flour mixture until smooth.

  4. Add powdered sugar, pisco, and vanilla, combining to form a smooth dough; add more pisco if crumbly. Shape into a disk, wrap, and refrigerate for 30 minutes.

  5. On a lightly floured surface, roll dough to 3/8" thickness and cut into 2-inch circles, re-rolling scraps until all dough is used.

  6. Place cookies on a parchment-lined baking sheet.

  7. Bake for 15-17 minutes until edges are golden, rotating halfway. Cool for 5 minutes, then transfer to a rack to cool completely.

  8. Spread dulce de leche on one cookie.

  9. Top with a second cookie to form a sandwich and roll the edges in coconut.
