Instructions

  1. Combine yeast, milk, and sugar in a stand mixer; stir until sugar dissolves.

  2. Whisk in eggs, salt, and vanilla.

  3. Whisk in 2 cups of flour.

  4. Add butter pieces one at a time, mixing thoroughly with a dough hook.

  5. Gradually add remaining flour, mixing until dough is combined, shiny, and soft. Knead until smooth, adding flour if sticky.

  6. Cover dough and let rise in a warm place for 1 hour or until doubled.

  7. Roll dough to 3/4-inch thickness on a floured surface. Cut rounds with a biscuit cutter; re-roll scraps once.

  8. Transfer rounds to a parchment-lined sheet, cover, and let rise for 30 minutes.

  9. Generously grease the air fryer basket with canola oil.

  10. Place 3-5 dough rounds in the basket, then brush their tops with canola oil.

  11. Air fry at 350 F for 5-6 minutes, flipping halfway through cooking.

  12. Set aside cooked doughnuts and repeat frying with remaining dough.

  13. Pulse strawberry jam in a food processor.

  14. Fill a piping bag with a 1/4-inch tip with jam. Insert tip into the doughnut top and fill until jam slightly pokes out.

  15. Sprinkle with powdered sugar and serve immediately.
