Air Fryer Latkes

Air-fried latkes offer a crispy, lower-calorie version of the traditional Hanukkah potato pancake.

Instructions

  1. Preheat the air fryer to 400 F and the oven to 200 F with a rack and baking sheet ready.

  2. Scrub and grate potatoes, optionally chopping them into smaller pieces.

  3. Grate or chop the onion, then combine with potatoes in a colander and rinse with cold water.

  4. Squeeze the potato-onion mixture firmly using cheesecloth to remove liquid; transfer solids to a large bowl.

  5. Allow the collected liquid to settle, then discard most of it, retaining the potato starch at the bottom.

  6. Whisk eggs, matzo meal, salt, pepper, and reserved potato starch together.

  7. Combine the egg mixture with the potato and onion shreds.

  8. Grease the air fryer basket with olive oil. Dollop 1/4-cup portions of latke mixture, shape as desired, season with salt, and brush with olive oil.

  9. Air fry for 8 minutes, then flip and cook for 5 more minutes until golden brown and crisp.

  10. Transfer cooked latkes to the warm oven. Regrease the air fryer and repeat cooking for remaining batter.

  11. Serve hot with desired accompaniments.
