Preheat the air fryer to 360 F.

Cut potatoes into 3/4-inch sticks.

Soak potatoes in cold water for 30 minutes to 12 hours, refrigerating if soaking longer than 30 minutes.

Drain and thoroughly pat potatoes dry.

Toss potatoes with olive oil in a large bowl.

Combine cornstarch, paprika, salt, and black pepper; sprinkle over potatoes and toss to coat evenly.

Arrange potatoes in the air fryer basket, cooking in batches if necessary.

Air fry for 25-30 minutes, tossing every 5 minutes.

Increase the air fryer temperature to 425 F and cook for an additional 5 minutes until golden and crisp.
