Air Fryer Butternut Squash

Instructions

  1. Preheat the air fryer to 390 F and lightly oil the basket.

  2. Peel and deseed the butternut squash, then cut it into 1-inch cubes.

  3. Toss the squash cubes with cinnamon, salt, pepper, and oil in a large bowl.

  4. Place seasoned squash in the air fryer basket, cooking in batches if necessary, for 15-20 minutes at 390 F, shaking every 5-7 minutes.

  5. Concurrently, combine balsamic vinegar, brown sugar, and an optional cinnamon stick in a saucepan. Bring to a boil, then reduce to a simmer for about 10 minutes until the glaze thickens to coat a spoon; remove cinnamon stick if used.

  6. Serve the hot squash drizzled with the balsamic glaze.
