Instructions

  1. Wash green beans and snap off stem ends.

  2. Start boiling a large pot of water. Once boiling, add green beans and blanch for 3 minutes.

  3. Drain the beans, then transfer them to ice water for 3 minutes before draining again.

  4. Thread a large needle with kitchen string or unwaxed dental floss.

  5. Pierce each bean one inch from an end; secure the first bean by tying a knot with a 2-inch string tail.

  6. Continue threading beans onto the string, leaving 1/2 inch space between each, then tie a knot around the last bean at the string's end.

  7. Hang strung beans in a dry, well-ventilated area for 1 to 4 weeks until they are leathery to brittle.

  8. Store dried green beans in clean, dry jars or containers in a cool, dark, dry cabinet.
