Instructions

  1. Combine olive oil and white wine in a large mixing bowl.

  2. Crush juniper berries, peppercorns, garlic, and 1 teaspoon fine sea salt into a rough paste using a mortar and pestle.

  3. Stir the paste, torn bay leaves, and slightly squeezed lemon slices into the oil and wine mixture.

  4. Marinate the lamb chops in this mixture for at least 12 hours in the refrigerator, turning occasionally.

  5. Prepare your chosen cooking method (skillet or grill).

  6. Shake excess marinade from the lamb chops and cook for 8 to 10 minutes, turning occasionally.

  7. Place lemon slices from the marinade over the chops while cooking.

  8. Season well with sea salt and freshly ground black pepper when the chops are almost done.

  9. Serve the lamb chops with fresh lemon wedges.
