Aebleskiver (Danish Pancake Balls)
Aebleskiver are traditional Danish spherical pancakes, a beloved pastry in both Denmark and Danish-American communities.

Instructions

Sauté apple pieces in 2 tablespoons butter until softened, then sprinkle with cinnamon.

Separate eggs; beat whites until stiff, then whisk yolks with sugar until creamy.

Sift flour and baking powder together.

Gradually combine flour mixture and buttermilk alternately into the whisked egg yolks until smooth.

Gently fold the beaten egg whites into the batter.

Heat an aebleskiver pan over high heat, then reduce to medium.

Grease each well with 1/8 teaspoon butter.

Spoon batter into each well to fill halfway, add an apple chunk, then cover with more batter to fill completely.

Cook until the sides begin to brown and pull away from the wells.

Loosen edges with a knife or needle, then flip and cook for about 2 more minutes.

Remove to a plate and sprinkle with powdered sugar, if desired, to serve.
