Instructions

  1. Roast whole spices in a shallow frying pan over medium heat until aromatic, then cool.

  2. Grind roasted spices to a fine powder, combine with other powdered spices, and set aside.

  3. Whisk yogurt and the spice mix into a smooth paste, then coat chicken thoroughly with the marinade and let sit for 30 minutes.

  4. In a deep pan, heat oil over medium heat. Sauté onions until pale golden, then add tomatoes and cook until pulpy.

  5. Add the marinated chicken and stir-fry for 10 minutes, browning all sides.

  6. Pour in 1/2 cup water, stir, cover, and simmer for 10 minutes until the chicken is nearly cooked.

  7. Uncover, add most of the ginger, stir, and increase heat to medium. Cook, stirring occasionally, until the sauce reduces significantly.

  8. Remove from heat and garnish with reserved ginger and chopped cilantro.
