Adana Kebab (Ground Lamb Kebab)

Instructions

  1. Combine ground lamb, minced onion, garlic, 1 tsp each of cumin and sumac, salt, pepper, red pepper flakes, and ice water in a large bowl.

  2. Knead the mixture until tacky, then chill for 30 minutes.

  3. Form a quarter of the lamb mixture onto each skewer to create kebab shapes.

  4. Preheat the grill to medium-high and combine remaining 1/2 tsp each of cumin and sumac in a small bowl.

  5. Grill kebabs for about 12 minutes, charring on both sides, sprinkling with the spice mix during cooking.

  6. Serve kebabs with lettuce, red onion, parsley, tomatoes, cucumbers, and warm pita or naan.
