Aborrajados (Fried Sweet Plantains With Cheese)

Instructions

  1. Preheat several inches of oil to 360 F.

  2. Slice plantain ends, peel, and cut crosswise into 1 1/2-inch thick pieces.

  3. Fry plantain slices in oil for about 4 minutes until golden brown, then drain on paper towels.

  4. Once cool enough, flatten each plantain slice to 1/4 inch thickness using a glass and waxed paper.

  5. Create plantain sandwiches by pressing 1-2 tablespoons of grated cheese between two flattened slices, sealing the edges.

  6. Whisk flour, sugar, baking soda, and salt; then stir in eggs and enough milk to form a thick batter.

  7. Dip each plantain sandwich in the batter, then fry in batches for about 4 minutes until golden and crispy.

  8. Drain on paper towels and serve warm.
