Instructions

  1. Place 1 pound bone-in chicken pieces in a medium saucepan, cover with water, and bring to a boil.

  2. Drain the water and rinse the chicken thoroughly.

  3. Transfer the rinsed chicken to a medium soup pot, add 4 cups of fresh water, cover, and bring to a boil over medium heat.

  4. Once boiling, skim any impurities from the surface and reduce the heat to low.

  5. Add 1 large peeled and 1-inch-cut carrot, 1 medium quartered tomato, 1 medium thinly sliced onion, and 1 teaspoon crushed black peppercorns. Simmer on very low heat for 1.5 hours.

  6. Stir in 3 medium peeled and 1-inch-cubed potatoes. Continue simmering for 2.5 hours, or until the chicken is cooked and vegetables are tender.

  7. Season with salt to taste and serve.
