Instructions

  1. Sterilize and dry a 1-quart pickling jar.

  2. Place mangoes in the jar, cover with salt, mix well, and seal tightly.

  3. Sun-cure the sealed jar for 1 week to soften the mangoes.

  4. Combine chili powder, aniseed or fennel seeds, mustard seeds, kalonji/nigella seeds, fenugreek seeds, and turmeric powder in a bowl.

  5. Drain water from the mangoes, then add the spice mix to the jar.

  6. Heat mustard oil in a skillet until smoking, then cool completely.

  7. Pour the cooled oil over the mangoes until submerged, mix thoroughly, and seal the jar.

  8. Return the sealed jar to the sun for 2 weeks, stirring daily.

  9. Serve, or refrigerate for storage.
