Aam Ka Achaar (Indian Mango Pickles)

Instructions

Sterilize and dry a 1-quart pickling jar.

Place mangoes in the jar, cover with salt, mix well, and seal tightly.

Sun-cure the sealed jar for 1 week to soften the mangoes.

Combine chili powder, aniseed or fennel seeds, mustard seeds, kalonji/nigella seeds, fenugreek seeds, and turmeric powder in a bowl.

Drain water from the mangoes, then add the spice mix to the jar.

Heat mustard oil in a skillet until smoking, then cool completely.

Pour the cooled oil over the mangoes until submerged, mix thoroughly, and seal the jar.

Return the sealed jar to the sun for 2 weeks, stirring daily.

Serve, or refrigerate for storage.
